good morning buckwheat pancakes!




wake up, get outta bed,
grind the coffee beans and
what to make for Attie's breakfast?

this morning, like many, I pulled out my homemade buckwheat pancake mix and whipped up a batch. very nutritional -as buckwheat is so good for ya!
check it out. very high in fiber, iron and protien... among others.

I make a big recipe in an airtight container which is good in the shelf and lasts me a few months



then its easy, mix together an egg, 1 cup of milk, 2 tbsp oil and 1 1/2 cups of pancake mix.

eat up!

especially with a little bit of agave nectar and pears!




The recipe roughly comes from the More-with-less mennonite cookbook.
A great book to have around based on eating healthy and cheap.
How to make things from scratch, grains, veggie and dry bean recipes...

I use mostly buckwheat, but also spelt, millet, etc... flours 
as well as a little organic white flour.
Add chia, flax seeds or hemp hearts...
and a blended banana or succunat for sugar.

yum and wholesome.
