orange Carrot Ginger soup







Here's how to make a hearty heart warming carrot soup.

It can be vegan or not...





Garden carrots make even better soup! but until then...

1 lb of carrots (about 10)
1 potato
1-2 tbsp grated ginger (depending on how much you love ginger)
1 tsp grated orange peel
1 small onion



peel, scrub, chop, grate...

the compost pile will love the remains~!




then add the veggies to a pot with 4 cups of Veggie or chicken soup broth,
1/2-3/4 cup of orange juice




simmer for 20 minutes or until the veggies are soft...


blend it all up.






then:







if you don't have buttermilk on hand (who does?) you can add 1 tsp lemon juice or vinegar to 1 cup of milk, let it sit for 10 minutes and voila- buttermilk.

or if you want it vegan, dont add any kind of dairy milk.

garnish with parsley!




a good winter or rainy day soup.

Oh yum! I haven't thought about carrot soup in such a long time. And with a but orange?! I think this will be going on the menu!
